Chicken Cacciatore

(slow cooker style)

4 teaspoons extra virgin olive oil

(if you want to add some heat 1 tablespoon of that Harissa EVOO)

3 lbs boneless, skinless chicken breasts 

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 medium red bell pepper, sliced 

1/2 medium green bell pepper, sliced 

1/2 medium yellow bell pepper, sliced

1 cup of onion

14 grape tomatoes

1 1/2 cups of water

1/4 cup all purpose flour

2 teaspoons of garlic powder

1 teaspoon of ground cumin

1 teaspoon of dried oregano

1 teaspoons of paprika 

 1/2 teaspoon ground red pepper (not needed if you use Harissa EVOO)

1. Heat 4 teaspoons olive oil in large skillet over medium high heat. Sprinkle chicken with salt & pepper. Add the chicken to the skillet cook 4 minutes per side or golden brown. 

2. Add chicken to 5 or 6 quart slow cooker. Add bell peppers, onion and grape tomatoes. Combine water, flour, garlic powder, cumin, oregano, paprika and ground red pepper in medium bowl. Mix well. Add to the crock pot

3. Cover cook on low 8 to 9 hrs or on high for 4 hrs 

serve over noodles or rice
